Grilled Mackerel with Ginger Serves 2
INGREDIENTS
2 fresh mackerel fillets
grated ginger (to taste)
a little salt and pepper
1 desert spoon of olive oil
METHOD

Mix the ginger, salt and olive oil in a small bowl.

Rub mixture into skinless side of fillets.

Place fillets under a preheated grill for 8-12 minutes. Cooking time will vary with heat of grill and thickness of fillets. Try not to overcook mackerel as it will dry out.
Serve with basmati rice and vegetables or salad.
