Grilled Mackerel with Ginger   Serves 2

 

INGREDIENTS

2 fresh mackerel fillets
grated ginger (to taste)
a little salt and pepper
1 desert spoon of olive oil

 

METHOD

  1. Mix the ginger, salt and olive oil in a small bowl.

  2. Rub mixture into skinless side of fillets.

  3. Place fillets under a preheated grill for 8-12 minutes. Cooking time will vary with heat of grill and thickness of fillets. Try not to overcook mackerel as it will dry out.

 

Serve with basmati rice and vegetables or salad.
