Haddock Florentine
Serves 1
INGREDIENTS
1 small fillet of natural smoked or fresh haddock
¼ oz of butter
150ml / ¼ pint of whole milk
1 fresh tomato cut in half
150g of Fresh washed baby spinach
Black pepper
METHOD

Cut tomato in ½ and place under grill to brown

Put the milk in a small pan and slowly heat but don’t boil.

Add the fish and cook for around 4-5 mins
-
Place butter in a non stick pan and melt.

Add the spinach and a little black pepper then cook till just wilted.
-
Place the spinach on the plate, top with the fish and serve with the tomato halves.
